The Molded Candy Topper Prepare these toppers first and store them in an airtight container to use later. Choose baby-themed candy molds in the shapes of babies, storks, baby carriages, rattles, etc. Make at least 50 pieces to have enough for each cookie. Candy molds and candy melting wafers can be purchased at craft stores, kitchen supply stores or on the Internet. Ingredients: * Colored candy melting wafers (pink, blue, yellow, green) Directions: 1. Fill the bottom pot of a double boiler three-fourths full with water. Place on the stove top over medium heat and bring to a simmer. 2. Measure one to two cups of colored candy melting wafers into the top pot of the double boiler. Place it on top of the bottom pot. 3. Allow the candy to melt, stirring frequently, until it is smooth and creamy. 4. Using a small spoon, fill the candy molds with the melted candy. 5. Place the filled molds into the freezer for 15 minutes or until completely hardened. 6. Remove from freezer and gently pop the candies free from the molds. 7. Store the candy in an airtight container at room temperature until ready to use. The Sugar Cookies Ingredients: * 4 cups all-purpose flour * 1/2 tsp. salt * 1 tbsp. baking powder * 1 1/3 cups unsalted butter, softened * 1 1/2 cups white granulated sugar * 2 tsp. pure vanilla extract * 2 eggs Directions: 1. Sift flour, salt and baking powder together into a mixing bowl. Set aside. 2. Combine butter, sugar and vanilla in a large mixing bowl. 3. Using an electric mixer set on high, beat the mixture until it is smooth and creamy. 4. Add the eggs. Beat until smooth and well-blended. 5. Add the sifted flour mixture to the butter mixture. Mix well until moist, smooth and lump-free. 6. Divide the cookie dough in half, cover securely with plastic wrap and refrigerate for three hours. 7. Preheat oven to 375 degrees Fahrenheit. 8. Grease cookie sheets with a generous coat of butter. 9. Lightly dust a work surface and rolling pin with flour. 10. Remove one-half of the chilled dough from the refrigerator. 11. Roll the dough out to a thickness of approximately 1/8-inch. 12. Using cookie cutters, cut the dough into round or square shapes. 13. Place cookies on prepared cookie sheets and bake for 6 to 8 minutes. 14. Remove cookies from oven. Allow them to cool completely before decorating. The Royal Icing Ingredients: * 3 cups powdered sugar * 6 tbsp. meringue powder * 4 tbsp. cool water * Food coloring Directions: 1. Sift powdered sugar into a large mixing bowl. 2. Add meringue powder and 4 tbsp. cool water. Stir vigorously to combine. 3. Beat on high speed with an electric mixer for approximately 8 minutes or until icing is thick and stiff. If icing is too dry, add a bit more cool water. If it is too thin, add a bit more powdered sugar. 4. Add food coloring, a few drops at a time, until desired effect is achieved. 5. Use immediately. Royal icing dries very quickly. Keep icing that is not being used covered with a damp cloth. Assemble the Cookies Decorate one cookie at a time. Royal icing dries very quickly, so each cookie must be topped with a molded candy immediately to make it stick. 1. Spread a generous coat of royal icing over the cookie. 2. Top it with a molded candy. 3. Repeat until each cookie is frosted and decorated. 4. Store the cookies at room temperature in an airtight container.
